At midnight tonight here (December 12) Elder Jared Leonard Bielefeldt will be boarding a plane in South Africa for the long journey home. He will be surprised to see how tall the nieces and nephew are now.Two years of his life has been dedicated to the Lord's work. His parents are so proud of him!

July Fun at the Cabin

Fun times at the cabin last week included a fishing trip to the Payson Lake as the forest were closed due to fire danger (however, the fish were not jumping); also the boys built an incredible tree house fort with a picket fence and gate below which included a swing hanging from the upper level. They called it "This is The Place". We also enjoyed one very fierce and long rain storm which had the kids dancing in the rain until the thunder crashed close by. Marty worked on his gardens, trimming trees and cleaning up the cactus from the yard. Hanne and I cooked and cleaned the kitchen and visited to our hearts content, which included many pauses to tend to the needs of the kids. Reluctant goodbyes were said with promises to meet again before summer is over.Spice, our poodle was pampered lovingly by Allie.

It is interesting that fireworks, a symbol of war, has become a symbol of celebration.

I am of the generation that lived in a time when children were fearful of war and bombs and practiced ducking under desks at school in case of an air raid. I am of the generation that sang numerous patriotic songs in music class during elementary school and proudly pledged allegiance to the flag daily. I am of the generation who had a father who fought in World War II and grew up listening to war stories at bedtime. I am of the generation that feels emotional during a boy scout flag ceremony. I am of the generation that is grateful to God for a country that is free and who takes the phrase seriously, "In God is our Trust". I am of the generation that prays for the rising generationsto hold freedom as a precious gift. I am of the generation that has a son serving in the military and prays for his protection and for his holding to the precious gift of hope in God as he stands for all that is right and good in the world - home, families and religious freedom.

May all generations remember and sing:

Gave proof through the night that our flag was still there;

Fishing at Green Valley Lake - Payson

Marty, Jake and the Nunley brothers had a great adventure fishing at the lake in Payson. (The picture below is not of Jake as a little boy, it is Sam!!) Sam and Jeff both caught fishes - they cleaned them and ate them - all by themselves. Uncle Eric was kind enough to grill the fish for them along with all the ribs, hamburgers and hotdogs. What a feast!

It is with mixed feelings that we spent the day at Camp Pendleton and at the San Diego airport with our Marine after his graduation from combat training. We are so proud of Joe's determination as he went through the past 5 months of training that pushed him to the limits of endurance and came out smiling.

He has shown himself to be of the same character as his Grandpa Sevey and Opa Bielefeldt as they both served in the military with honor and courage.

Joe shared with us his fears, hopes and dreams just before we left him at the airport. We hugged and I cried later, wondering when we will next meet our son - our Marine.
We are proud parents of a proud marine!

Fun in Snowflake

While visiting in Snowflake, just a few days after a huge snowstorm, we braved the ice and went to explore a treasure house that we had discovered several years ago. Now that these kids live there, this might become a favorite spot. Of course it wasn't too cold for an ice cream treat, which everyone enjoyed, but only Allie made hers last long enough for a picture.

The delightful Heritage Antiques has wonderful homemade sandwiches and soups, cookies, ice cream and a variety of specialty drinks appropriate for families, served from an old fashioned soda fountain. If that's not enough, it is great fun to explore the old treasures in the musty basement and several rooms that seem to infer hidden tunnels to a fantasy world. I would recommend planning to do some shopping as well as eating in this magical place.

Enchanting Berry Picking and Falling Stars

Watching the stars all night was a thrill during an exciting meteor shower in August. It was amazing to see a star streak across the sky and disappear in a blaze of white. Sometimes there were several falling stars within a minute. Robin led us in the song, "Catch a falling star and put it in your pocket." Pictured here are the star gazers awake at 4:00 a.m. Even though everyone was so tired, the next day was spent gathering blackberries at Tonto Creek and putting them in a basket. The little ones frolicked in the pools of water which were abundant in the creek. Later Beth made a yummy blackberry breakfast cake for dessert after which the group laid out under the stars again for another all nighter. Fatigue won over and the group all fell asleep before midnight. Early morning brought far away sounds of coyotes, but no sign of elk.

Today. July 1 Joe was sworn in as a recruit to "America's elite warriors" - the Marines.
During the swearing in he had strong feelings that serving his country is exactly what he wants to do.
As a recruit he will spend some time each month preparing for being shipped out in March.
Being a protector and a warrior for the right has always been in Joseph's nature.
His parents are so very proud of him and are very emotional.

Thankfully, the weather was beautiful and the doggies all had a great time romping around.

All my little children are grown up now and the pattering of little feet only comes when the grandchildren come to visit -- the coloring or original art all over the walls has ceased mostly, unless a grandchild happens to find a crayon - which isn't very often -- the strange assortment of treasures under the beds have vanished forever -- there are no more unmade beds and piles of broken toys and dolls scattered through the house -- there are no more barefoot children, except when the grandchildren come --the piles of laundry are now in their own homes as they are mothers and fathers with the same challenges I had. I now have plenty of quiet time to be creative, to read, to write, to meditate....Bring on the grandchildren!!!

Elder Bielefeldt has been honored with a Sotho name - "Khotso", which means Peace - so I wonder if they call him Elder Khotso?! He was also given a Sotho blanket, which is part of their traditional clothing and which keeps him warm when he's sleeping.

He doesn't want to be transferred from this area as he loves it so much, but he probably will be this week.

This Easter egg contest began by scooping out the yolk of the boiled egg - then filling the white of the egg with very hot pepper sauce - then seeing who could be the first to eat the egg up. Ready - set - go! I was last cause I wanted to relish the yummy taste. Parker and Jeffrey tied as they just let the egg slide down their throat. I explained I use to have ice cream cone eating contests with my sister and would try to be last so I could enjoy longer. So last is the winner in my opinion! Anyway, Marty and I were definitely the winners to be able to have a delightful holiday with the Nunley's!

Springtime in the Desert

March brings Spring and the fragrance of citrus blossoms

to create a heavenly place for we who are desert dwellers.

Peach blossoms promise an abundance of summer sweetness.

We delight in our gigantic pine tree here in the desert with numerous new pine cones forming.

(This pine tree had it's young beginning with us many fun Christmases ago.)

What? The cilantro decided to bloom. I can't seem to make enough salsa to keep it trimmed up.

(and I make it often, as well as make fresca even more often)

Of course, I take delight in my roses, but most are not blooming a lot yet.

The Hodge Podge Lodge was the location of a magical visit to Teribithea with 5 enchanted grandchildren. What began as an ordinary day turned into a journey of discovery and wonder of places only imagined before in the mysterious forest beyond the boundaries of the "Lodge". The children nearly froze as they walked the sudden ice fields behind the barn, but.... their exploration was a delight when they discovered the patch of edible ice. In their delight, they frolicked in the barn with fairies and gnomes and a wild, furry creatures that had sharp teeth and a fierce growl, but turned out to be a special friend in deed. They bravely decided to trudge through the mud, the deep washes, and the hills and explore the dense and dark forest beyond -- where they found a field of treasures that shall remain unnamed. New trails, where no man had walked before, were blazed by these daring children. Strange, wild birds zoomed and threatened overhead, but their new friend, the wild furry creature, protected them. As dark, unfriendly shadows, cast by the deepening dusk, threatened to leave them stranded in the strange kingdom, these inquisitive children heard and followed the insistent whistle of their beloved Grandaddy. They rushed into his safe and secure arms and, after a time capsule, with a few treasures was buried in a secret place, they were whisked away to the ordinary world once again (while yearning for the land of Hodge Podge Enchantment).

Celebrating Grandma's 90th

From horse and buggy and outdoor privies to jet age, computers and cell phones, Margaret Sevey has seen a lot of change in her 90 years. She has endured severe economic trials, physical hardships working on her farms, loss of all material treasures as a young married mother of two when her home burned; she has practiced provident and thrifty living her entire life. The ability to save and budget and use wisdom in debt control has enabled her to bless the lives of her family materially. She has a strong work ethic as well as strong opinions on nutrition. Two days before her party, she said to me "Well, today I just sat around." That is literally the first time she sat and relaxed completely without feeling the desire to work. In the past several years, as her energy has weakened, she has remained industrious crocheting, quilting, scrap booking and reading. TV has never been part of her life (except for Lawrence Welk and LDS Conference). It was a delight to her last evening to be honored by many friends, family and relatives as they came to wish her "Happy Birthday." There were so many expressions of love and appreciation for her.

What a fun time was spent on an absolutely beautiful day at the Riparian Reserve in Gilbert with 4 fun and imaginative grandkids! They led Gramie on an enthusiastic and energetic walk down paths, searching for and sharing remembrances of their favorite spots they had found on other trips. The kids ended up sharing their popcorn snack with some very appreciative and demanding ducks on the pond who were quacking a happy song. If you look closely at the smiles, you might discover one 6 year old who recently had a visit from the tooth fairy.

What a joyous holiday season from Thanksgiving thru New Years, creating memories with family all month and culminating with New Years Eve at Beth's house. We began the last night of 2009 with a breathtaking sight - a "Blue Moon". What a delight to observe the rising spectacular moon on our 15 minute drive to Beth's house. When we arrived we were greeted with hugs and "Happy New Years" and enjoyed a feast of appetizers and goodies. There were games and visiting and phone calls and finally, at midnight, a great display of fireworks. Suddenly, we were in 2010 and talking of how fast the years pass by. This is a time to feel nostalgia for the memories, gratitude for many blessings, and hope as we set goals and plan for the new year.

What a wonderful season - a time of family sharing love for one another in so many ways. The week of Thanksgiving was also a week of Santa and Christmas as Jared was leaving a week later for his mission in South Africa. The month of December included: My baby, Jared flying to Johannesburg; a heavenly piano recital of all my students; a delightful trip to Las Vegas to visit Marsie and family (and have time with the children to create a special gift for their parents); a fun birthday lunch for Beth at Joe's Farm Grill; a beautiful Christmas Eve dinner with Missy and family (love those darling girls); a Christmas morning phone call from "Elder Beautiful", as the African missionaries cannot pronounce "Bielefeldt"; a delicious and magical morning with Beth's family Christmas morning (we could have stayed all day); lovely phone calls from Marsie, Hanne and Susie; my brother, Johnny and wife, Jolene Sevey coming in with a yummy steak dinner they brought and prepared for Christmas evening with them and my mother; a visit and gift exchange with all my siblings though not all at once and a dinner at Serranos (treated by Johnny) with some of us; a joyful time having our Joseph stay with us a few days bringing fun and laughter into our home; treats and gifts and emails and letters from dear friends; Christmas movies on DVD (my favorites are "The Gift" and "Mr. Krueger's Christmas"); visits with Oma Dessie; and sharing a few quiet times with my sweetheart, Marty now that we are "empty nesters." (lol)

Jared Leaves for Johannesburg

Here is a collage of Jared's dinner with family and friends the night before he left for Africa. Jared finished packing at 1:00 a.m., then slept 3 1/2 hours, then up to get ready and off we go to the airport at 5:30 a.m. What an emotional time to send him off for 2 years. (for the parents - Jared was excited and so ready to go) He sent an email we received the next day at noon (which was about 9:00 S. Africa time) to say the streets of Johannesburg are flooded, the MTC has great food and great leaders, and he has a companion from Zimbabwe. A business woman at the airport commented on what a wonderful service such a young man was giving. His motto is "Doubt not, fear not." (D&C 6:36)

We were so lucky to have an early visit from Santa before Jared left for his mission to South Africa. Oh what fun it is to have a visit from Santa Claus!! Almost as fun as the visit from Santa was when all the grandchildren and all the dads and uncles got a harmonica from Grandaddy later on after Santa left. This family makes music together. Oh, yeah! Thanksgiving is such a unique holiday - no purchased gifts of any kind are expected - just lots of yummy food to share and lots of family to enjoy visiting with. My favorite food this year was the scrumptious jalapeno turkey dressing Beth made, knowing how much I love that flavor. What a thoughtful gift to her mother. Homemade Donuts - a Halloween Tradition

Once again I made donuts because my family tells me it just wouldn't be Halloween if I didn't!

After I was done making them, my daughter reminded me that the best donuts I ever made were using my french bread recipe here and adding 1 tablespoon pickle juice to the recipe since lemon juice wasn't available. I deep fry in canola oil.

On the Road for Fall Break

What a wonderful week of traveling to Gallup for Katherine's baby blessing - then to Las Vegas to visit precious ones. Grandchildren have become the joy of life. The clock spins too fast, but cherished memories of all the grandchildren bring delight and are held close to the heart. Of course, all the parents are so dear as well.

Autumn is my favorite season!!!! As a little girl, I sang:

I still hear the song in my mind along with the memories of my childhood, sweeping the autumn leaves into a big bunch and making nests in the leaves, playing "squirrels". Years later, but many years ago now, my little ones played the same. Our yard was full of leaves and children for many years.
Now there are no leaves and no children playing squirrels, but many delightful memories.

What do you do when the refrigerator goes out and the food defrosts? Thankfully, there was no meat (we could have had a barbeque). Well, since I had bought a canner the day before, I canned the defrosted bag of green beans (5 pints) made strawberry freezer jam (1 1/2 quarts) from the defrosted, mushy strawberries and canned 14 quarts of peaches that we had planned to eat for the next couple of weeks (love a peach a day)since there is no room in my kitchen refrigerator for anything extra. This is probably a blessing in disguise as we can't store extra frozen goodies or fast foods now.We can look forward to eating peaches for more than a couple of weeks.

We send our love to all our dear children and their spouses and our precious grandchildren. We have found the key to joy and are delighted to share with each of you the key which opens the greatest treasure of life - "happiness and peace in daily living" - This key only works to open this sought after treasure when we notice the little positive details of the people we love or want to love with gratitude. The bonus is that when we also notice little positive details of daily living with gratitude our hearts swell with more joy than we can contain. This key is very simple, but when used with determined effort, then all our prayers can and will be answered. It is worth it to guard this key and use it diligently.

Family Fun in Las Vegas

Being with some of our precious family is the best fun we can imagine. What a delight to spend several special several days with our Jensen grandkids in Las Vegas. Friday evening we enjoyed yummy shrimp quesedillas with a dance show afterwards performed by the little girls. They can actually ballet on their toes - the choreography is incredible! On Saturday we had such fun at the park. On Sunday we enjoyed the peace of chuch meetings. On Monday evening we had great fun with a special patriotic family night, learning about the first flag of our country and the declaration of Independence - we learned how to make a 5 point star - and finally we had a spectaculor firework show put on by all of us, but directed by Ben - and last of all, a yummy old-fashioned blueberry cobbler with icecream! A multitude of original craft projects were interwoven into every available hour of the day and evening by the children - from crowns of all sorts, to stars, to all manner of drawings and colorings of cards and pictures, to a noise maker made with 2 cups taped together and filled with rice. It seems like all of our grandchildren are bursting with creative ideas.

In honor of the truly great father Marty is, the morning began with blueberry pancakes - then church meetings - then a roast beef dinner with all the trimmings - then the family over for homemade ice cream and rasberry/blackberry cobbler (purchased fresh and frozen several weeks earlier when they were on sale) in the evening.

Time to get on the road - Should take 5 1/2 hours plus a couple of stops Are we there yet? When will we be there? OoooHH! Kind of scary at Hoover Dam! Friday at Red Rock - Sooo windy, but sooo incredible! The kids loved hiking up the rocks and exploring the canyon! The views were amazing, the company was the best - but we had to take our picnic lunch home as it was too windy. (We stopped at Costco for pizza instead) ;) Saturday was a special day - it felt like Sunday. To celebrate Liesel's birthday we enjoyed breakfast cake, German showstopper pancakes and fruit salad. Her baptism was at 10:00. Marsie gave a beautiful talk. Liesel was beautiful and so happy. The day was memorable and sweet. The weather was kind of chilly, but we were all warm with love and family activity.

Jeffrey is flying through the air - it's magic! The cousins had such a great time together at Hanne's house. Thank you Hanne and John for your hospitality and yummy food. What a memory of the great barbecue - At least it finished cooking before the storm drove us indoors. The trip to the bead store was great fun, especially for Dad and Beth. Best of all was visiting with my daughters and watching the grand kids play.

A Day at the Cabin

We had such a fun day with Jared helping us haul and set up a wonderful log rocking chair at the cabin. Jared and Marty went to Arby's to get lunch while I stayed and organized and rearranged things. It was beautiful weather - a bit gusty and chilly at first. We were thrilled to see blooming Iris all over the grounds - our first year the elk didn't chomp down the plants

Beth's Goats at the County Fair

We had such a delightful time with Beth and her family at the County Fair on Friday. It was great fun to see one of her goats receive the Grand Champion award in her class and also other awards for other goats. This was special as she has been working hard to build up her herd. She will blog about it herself, but I just have to share several photos of the fun. We totally enjoyed seeing Jill, Lucy and Jesse take the goats into the area to be judged. They were being judged as dairy goats. Robin and Elsa were having fun exploring the fair. They were excited when their Dad arrived so they could go on some more fun rides.

These babies were so happy when their Momma was thru being judged "Grand Champion"!

The two baby boys were very popular as potential champion bucks and had several very interested buyers. Check Beth's blog in a few days for an update on all the fun.

Easter 2009

We all had a lovely Easter Sunday, beginning with church and ending with a family gathering. We enjoyed a scrumptious dinner of apricot filled lamb roast, ham, potato salad, fresh veggie salad, roasted parmesan asparagus, berry jello salad, bunny buns (of course) and absolutely delicious carrot cake cupcakes decorated with a festive miniature, edible, Easter basket on top. After dinner it was pleasant to watch the kids gather treasure filled eggs that had been hidden by a very tall bunny. We then gathered in various groups to visit, look at treats and share creative ideas. It was a day filled with joy but also a day to miss the precious family members not able to be there.

Here are a few of the swap treasures Missy and Beth did for me.I have already arranged them in various places or eaten some of them. Beth made some delicious blood orange marmalade, the adorable bunny kitchen towel, the fun musical bookmark laying on my Madame Alexander Pinky doll, and the Rosewater mist along with other fun things. Missy gave me a delightful bag filled with all kinds of fun things - if you look on her blog she has a nice picture of her swap. It was such fun that we are going to do a May Day swap (on my birthday) yay! I get to make a may day basket for Lucy - what fun! Oh yes, It was so fun to have Jared and Jenny color eggs for me on Saturday night. (pictured below) Also pictured below are the cupcakes Beth made with applesauce, whole wheat flour and agave - a natural sweetener from cactus. Thank you Beth, Jared, Jenny, Missy and everyone for such a sweet time!

A Creative Swap with Missy

What fun to do a creative swap with Missy. I was so delighted with the stuffed love bird and sweet little doty doll she made me. She included a decorated valentine she created, filled with heart doves. What fun! In return I baked her a loaf of cheesy french bread with a tiny jar of fruit jam from England (World Market) wrapped in a yard of quilting fabric, and made a sachet out of a vintage doily, filled with lavender from my garden and decorated with silk roses and a tiny purchased humingbird. Thank you Missy for helping me to feel creative and loved!

It's the season for planting a garden again, but Jared says we already have a garden so full that he doesn't want to turn it under and replant. Let's take a vote. Do you think it needs replanting or shall we just keep enjoying. Scroll down and see our prizes and then give us your opinion. This tomato plant gave us fruit last July. Jared transplanted it to a pot on our patio in October. Finally, the straggly little bush has given us 4 small tomatoes this week. Somewhere up there is the start of a bird nest - a favorite tree for our neighborhood birds. This little orange tree is making big promises. This very small 6 month old Mexican oregano plant actually provides very yummy fresh spices for our soups and beans. This year old basil plant just keeps on growing. We have big hopes that our tiny little lime tree will bear fruit this year. What a surprise to find this fresh head of lettuce hiding in the garden in the middle of the carrot patch. Oh yes, Jared and I compete to see who can eat the most jalapenos. Nothing like having a couple every day from the garden. They are a carry over from our summer/fall garden. This tomato plant came up volunteer last summer and gave us a few ripe tomatoes. It has survived the winter and is blossoming. We've had as much broccoli as we could eat for more than a month. It just keeps on producing. And yes, you really can eat broccoli that has flowered.

Tutorial on crockpot pinto beans - yummy

I seem to be famous for my beans and am often asked how I make them. Here is a tutorial - step by step. #1 I always choose the best quality pinto beans. (I never, never, never use old beans that are dark brown!) I do use beans from the cannery - they seem to stay fresh pretty well - but they do have to be thoroughly washed as they are not very clean. Mostly, I prefer to purchase from Walmart (not Sam's) as they are fresher or from Sprout's in a 25# or 50# bag. Beans are not very expensive, so splurge and use the best! I fix beans once a week, even now that I only have 2 at home. They freeze well, though we usually eat them up too fast to make that practical. My mother still cooks hers from the dry stage, just a small amount. I start with a colander filled half full for a large group or maybe a third full for a small group. My daughter noticed I wash and wash and wash them, swishing them around with my hand. I place the colander in a larger bowl (which you cannot see in this picture) so they are very well cleaned. If you use the triple cleaned beans you don't usually have to sort them out by hand to make sure there are no rocks or yucky stuff in them. My mother always sorts them by hand first - spreading them out on the counter to make sure no rocks are in them. I'm lazy and only do that if they look dirty. Sometimes I soak the beans overnight. A couple of years ago, Hanne told me I don't need to, so now I usually don't. Typically I put the beans in the crockpot after I have washed them, and fill the pot with water up to about 3 inches from the top. Then I chunk up an onion and throw it in the pot with some sprinkles of red chili pepper (about a tablespoon). Since my cooking class I took in Santa Fe I now add a spice called "Epazote". Native to Central America, especially Mexico and Guatemala, epazote is common to those cuisines. It is most often used fresh in these regions to flavor beans, corn and fish. The strongly scented herb is said to help avoid the gastric discomfort that sometimes occurs after eating beans. Ancient Aztecs used epazote both medicinally and as a culinary herb. I decided to copy the definition for your information. This is a great help and helps us enjoy beans without intestinal problems. Sometimes when I'm done I throw in Mexican Oregano from my little pot I have growing outside. I never, never salt at this stage. Ready to cook! I usually start about 10 or 11:00 when I don't presoak. When the beans are done (about 5:00) I add the salt and fresh Mexican Oregano. The beans will always be tender if salt is added at the end rather than at the beginning. I don't know why - that's just how it is. (Grandma Sevey always adds fresh chili peppers and fresh cayenne peppers at the end. When Beth was little she loved eating them with vinegar like Grandma did.)

Uncle Frank was the most popular guy there with a crowd of children surrounding him and wanting his attention. Felicity found a "quiet" moment to get all the attention herself. Elsa was loving to visit with Aunt Annethel and Oma when Uncle Frank was busy with one of the other kids.

Early this morning, before I even started teaching piano, Marty suggested I take pictures of the tulips my friend gave me before they wilt. Thankfully, I did at the time as now, 3 hours later, the sweet gift is wilting. I am reminded that we need to take time to notice the small things in the midst of all the confusion of life. Some opportunities are only for a moment; some precious gifts are fleeting; cherished friends and loved ones are not always present; time passes but memories remain; the sweetness and joy of the moment can last forever. My heart is so touched at the thoughtfulness of my friend and I am reminded in my memories of her kindness to me. This is symbolic of all the kindnesses I receive from so many. Sometimes I forget to remember. The scriptures say "Remember, remember". So with gratitude, I share a few pictures of the temporary beauties around me. When seen in the scope of the world, they might seem but an insignificant piece of beauty; when seen in detail, they become an overwhelming part of my gratitude for the creations and gifts and people that surround and bless my life and take my breath away.

I placed the tulips on a precious table cloth my mother embroidered in detail with her aged and shaking hands, fingers that tediously created a gift of love.

The glorious apple blossoms trying with all their might to create an apple to please, but perhaps will never come to fruit. The blossoms themselves give joy and promise. This is the last rose of winter, so high it can only be seen up close from my balcony. As we arrived home Sunday evening, the fragrance of freshly opening citrus blossoms overwhelmed me and instantly reminded me of the month I became engaged to my sweetheart 41 years ago.
